Lamb and Goat Meat Cuts: A Quick Buying Guide

Lamb and goat share familiar cut names, including leg, shoulder, ribs and chops. In the selection we carry, lamb portions are often larger and meatier, with a lower proportion of bone than comparable goat portions. This varies with the animal and the individual cut; ask our butcher to help you compare.
Common cuts: what to ask for and how to use them
- Leg (raan): Ask for a whole leg, smaller portions or diced pieces. A larger leg suits roasting; diced pieces can be prepared for curry.
- Shoulder: Ask for a shoulder portion or bone-in pieces for slow-cooked curries, stews or braises.
- Ribs: Ask for a rack or smaller rib sections. Roasting or slower cooking followed by a grill finish can suit different preparations.
- Chops: Ask for rib or loin chops for grilling or pan cooking. Shoulder chops usually benefit from slower cooking, so tell the butcher which type you want.
Whether you choose lamb or goat, tell our butcher the cut and portion size you want. If you are unsure of the name, describe what you need and the team can help.
