Chicken BBQ Cuts: Tikka, Seekh Kebabs and Whole Chicken

Chicken belongs on the BBQ menu too. Whether you are making tikka boti, seekh kebabs, chicken tikka or a whole-chicken meal, choosing the right cut makes ordering easier. Halal Mart carries Zabiha Halal chicken and recipe packets to help take the guesswork out of seasoning.
Which chicken cut should you choose?
- Tikka boti: Ask for boneless chicken thigh or breast cut into even cubes for skewers. Tell the butcher the piece size your recipe needs.
- Chicken seekh kebabs: Start with ground chicken, shaped around skewers after seasoning. Ask our team about availability and follow your recipe for mixing and chilling.
- Chicken tikka: Choose bone-in leg quarters, with the thigh and drumstick attached. Ask for the preparation your recipe calls for.
- Chargha or sajji: Start with a whole chicken. These are different preparations, so follow your chosen recipe’s steaming, frying, roasting or grilling method rather than treating them as interchangeable.
Recipe packets make chicken BBQ easier
Pick up a BBQ or kebab recipe mix alongside your chicken. We carry recipe packets and seasoning mixes from Shan, National, Laziza, Sadaf and Ziyad. Ask which available mix suits chicken tikka, boti, seekh kebabs or your whole-chicken dish.
Follow the packet’s meat quantity, added ingredients and marinating directions; blends differ, so check before adding extra salt or spices. Specific mixes and stock vary.

Visit Halal Mart at 5115 N Portland Avenue, Oklahoma City, and explain your dish to our butcher. Custom cutting is included at no extra charge. Call (405) 948-0908 about a particular cut or recipe packet before your visit.
Cook all chicken, including ground-chicken kebabs, to at least 165°F (74°C), checked with a food thermometer. Check the thickest parts of a whole bird without touching bone; grill marks alone do not show it is safely cooked.
