Basmati Rice Guide: White, Sella and Brown Explained

Understand the labels, compare textures and choose rice that suits your dish.
← Back to BlogThree labeled bowls of dry white basmati, golden sella and brown basmati rice

Basmati is an aromatic, long-grain rice available in different forms. White and brown describe how much of the outer grain is removed; sella describes parboiling before milling. Sella can be basmati, so check the full name on the bag rather than treating “sella” and “basmati” as opposites.

White basmati: a versatile everyday choice

White basmati has its husk and bran removed. It cooks into light, fluffy grains and works well with curries, dal, pulao and many biryani recipes. Choose it when you want a familiar, delicate texture.

Sella basmati: firmer grains for biryani

Sella rice is parboiled before milling. Sella basmati tends to hold its shape well through longer cooking, making it useful for dum biryani and larger batches. Packs may say white sella or golden sella; the golden type has a yellowish tint. Sella still needs cooking—it is not instant rice.

Brown basmati: a nuttier, chewier option

Brown basmati keeps its bran layer, giving it a tan color, nuttier flavor and firmer bite. It typically takes longer to cook than regular white basmati. Try it in rice bowls or as a side when you prefer a wholegrain texture.

Which rice should you buy?

For softer everyday rice, start with regular white basmati. For biryani that needs firm, separate grains, consider sella basmati; regular white basmati also works when your recipe calls for it. Choose brown basmati for a chewier wholegrain alternative.

Follow the packet for rinsing, soaking, water and cooking time. Do not assume one water ratio works for every rice type or cooking method.
